Then it was time for my "date"...

Back at home I rested with my kids for a while and helped my son get ready for our "date". We were headed out for our own happy time together.

My mother's quick and easy cookies

You will need:
1 box of cake mix any flavor
1/2 oil or melted butter
2 eggs

Preheat your oven to 350 degrees.

Mix the ingredients together and form one inch balls.

Roll in sugar if desired. (Powered, brown, "regular" sugar or even colored sugar)

Place on a cookie sheet about an inch or two apart.

Embelish as desired. You may top these cookies with M&M's, a bit of jam, sprinkles... your imagination is really the only limit. Experiment and discover your favorite combination.

Cook for about 8 minutes or until done. Cookies will continue cooking a bit on the baking sheets. Allow to cool slightly before removing from the pans.
